Bearded Lady Catering Co. very first catering...


This event for 65 people was a wedding for Clarissa and Doug. It was in this really great old building in Bellingham, WA called 'Broadway Hall'. They chose a theme of Mediterranean cuisine and a did all their own decorations to transform the hall into a sea scape beauty. The bride is completely vegan, meaning no meat, dairy or any other animal by-products. I was able to create a complete menu that pleased meat eaters, vegetarians and vegans alike, as well as one gluten free guest that did not include any meat or dairy.

Grilled fruit skewers of peach, kiwi and strawberry
Crustini with roasted garlic and balsamic reduction
Grilled zucchini ribbons filled w/ rosemary infused white bean puree

Spring greens with fennel and strawberries, served with a citrus vinaigrette

Handmade asparagus filled ravioli served with a creamy walnut sauce
Pan fried tofu encrusted with cornmeal served with caramelized onion and pea sauce

Roasted green beans with lots of garlic
Braised carrots with white balsamic vinegar and mint

Jordan made a beautiful vegan wedding cake with a sea scape look. This was made of a yellow cake, blackberry jam filling and a vanilla buttercream frosting.

Buche Noel to you!


This is a traditional Buche Noel cake made by Melanie. It is made of a chocolate sponge cake, with a chocolate ganache and filling. It is decorated with homemade merigune mushrooms, little fruit sculped from fondant and fresh rosemary.

These are vegan yellow cake with a vegan vanilla buttercream gone blue!

Coconut cake


The beloved coconut cake, a white cake made with tons of butter and cream, but remarkably not overly sweet, with a coconut filling similar to one you would find in a German Chocolate cake, cream cheese frosting and toasted coconut bring it all together! I think Melanie's Step-Dad, John, is seriously addicted to this thing, but who can blame him!

Zuchini Cupcakes, loved by all!


Evan, Melanie's brother enjoys his first experience with a zucchini baked good... I think he liked it! Amie, her sister and Solan her brother - in-law, liked it just a wee bit too!

Childs birthday cake, Jordan style!




This is a very adorable cake that Jordan made for a child's birthday. I was a chocolate jelly roll with chocolate frosting and filling.








Sally's birthday cake that i swear weighed 10 pounds!

Fall Gala


Here are Denise and I during our second year of Culinary school. We were asked by our instructor to create and actualize an appetizer menu for South Puget Sound Community College's annual Fall Gala. An event where the people who have donated money to any of the colleges scholarship funds are treated to a night of food prepared by the schools culinary arts and baking and pastry arts programs. This event had about 350 people attending.



This is a citrus - thyme grilled shrimp appetizer.



This is a view of the epicenter of the the appetizer area! We also made pumpkin gougeres, sweet and spicy mixed nuts, mini quiche with goat cheese, basil and parma ham.

We made some great food, crab wontons, chicken skewers with curry dipping sauce, ginger tempeh, pineapple fried rice and lettuce rolls with avocado, basil, jicima and lime.
